Learning the art of the finest smoked meats was not an easy process, but through much perseverance, a special taste emerged. Bringing it from Texas to his hometown, Alex opened Project BBQ out of a food truck in 2021.

Lines were soon formed, and word spread quickly.

You no longer have to find the old food truck in the parking lot of Crown Labs, but instead can visit the permanent location.

It comes with a pound each of brisket, pork, and turkey, half a pound of sausage, a rack of ribs, three large sides, and either tortillas or sliced bread. You might need a few friends to finish the whole thing.

They also add their signature BBQ to tacos and burritos but for something truly unique try the Schmack N Cheese Sammy. This delicious dish takes mac and cheese and adds either brisket, pork, or turkey between two toasted pieces of bread, making for one mouthwatering sandwich.
