Louisianians have been feasting on po’boys for nearly 100 years. While the actual origin story can get a bit muddy, it’s widely believed that the iconic sandwich was invented by the Martin brothers, Benny and Clovis, who wanted to feed the New Orleans streetcar drivers who went on strike in 1929.
