With a population of around 200, Jackson is a sweet little community near South Sioux City in northeastern Nebraska.

For a long time, residents and visitors enjoyed chili dogs and delicious ice cream at a drive-in restaurant called Andy’s Sweet Tooth. When the business closed, a hole was left in Jackson’s dining scene.

A few years later, Jackson’s own Tess Etherington decided to do something about that.

The Lunch Box/Facebook She and her husband bought a vintage Winnebago camper and converted it to a kind of lunch truck in their driveway, adorably naming it The Lunch Box. They added a few shaded picnic tables, and the response was overwhelmingly positive.

A few years later, business was so steady that The Lunch Box was able to move into the building previously occupied by the Sweet Tooth. With a lot of help and support from family and the community, the restaurant opened in June of 2022.
