One of the most famous waiters at the grill was Harry Tervalon, Sr. He was the first waiter hired back in 1946 and worked there until his retirement in 1996. He even came back for the ribbon-cutting ceremony when the diner reopened after Katrina.
Between the staff and the menu, you really can’t lose here.
